Palm Sugar! We opened up a can of worms with that post from two days ago. misschu has to balance considerations of sustainability, nutrition, price and of course perfection with all ingredients we use. Where possible and definitely where it counts we use local and sustainable produce. What we have learned: palm sugar is better for you than refined sugar. It’s nutritional value needs to be properly peer assessed. The sourcing of the sugar is not radically unsustainable but farmers who switch between sugar and coconut harvesting seem to reduce the nutritional value of their coconut crop over time. A little irony on a large island: when people complain about Australians using unsustainable products from Asia I hope they realise we export hugely unsustainable beef, rice, wine and other agricultural products to Asia. Yes Asian rainforests must be preserved but the driest continent on earth is a breadbasket to Asia? ouch!…sorry, just decided to open another can of worms ;-)
