Paneer Biryani On Lonely Planet!! Thank you so much Saloone darling for missing my food, and also to you and Aditi, both my nieces for having this brilliant idea of staring this Food Page Journey. It was their idea and they set up the page and I must say I am enjoying the writing and the most amazing thing is 600 to 1000 people are following it!! Having been in India for the past two months I have been treated like a queen by my sister in law Payal and my friend in Delhi and have had three, four dishes served to my morning, day and night! Not complaing enjoyed every minute of it. Back to reality!! The threat of Rita Sood to have my mutton biriyani, and all the new equipment we got , got me back in the kitchen! Neeras mom gave me some home made paneer, and freshly ground garam masala and I decided to try to make Paneer Biryani in my new rice cooker. We always tell our students of Indian Cookery the key lies in how to make the masala right and the fresh ingredients. We start from scratch from the onions which have to be made golden brown first. Being in a foreign country and wanting a short cut , I decided to try your Grandmas tip(my niece Saloones Grandma) and use crisp fried onions. The biriyani came out delicious. Ok this is how I made it..... Added 1 tbsp of oil to the pan, when hot added 2 or 3 cloves of chopped garlic, after a few seconds add 2 very finely chopped tomatoes, on a medium flame cook the mixture, gradually add 1/4th cup of water little by little cooking it all the time, then add 2 tsps of crisp fried onions(the magic short cut ingredient) cook for a few mins on a low flame, add 1/2 tsp of salt, 1/4 tsp of turmeric, 1/4 tsp of red chilli powder, and 1/4 tsp of garam masala. Add 1cup of cubed paneer, let it simmer in the gravy(if water has run out can add a little more. Then wash 1 cup of rice drain and put in rice cooker, add the paneer along with gravy, add 1 and half cups of water(water should always by the rule of the thumb be double the quantity of rice, and you have 1/2 cup in the gravy of paneer) Mix well . Switch on rice cooker. Hurrah! Paneer Biryani Is Ready! Garnish With Fresh Coriander And Serve. (I didnt have any coriander.....Sorry! ) .
