Passionfruit Self Saucing Pudding!!! Omg!!! How I love passionfruit. The weather in good old Adelaide today determined my dinner menu for the night. Being this rainy cold afternoon, what better way to endulge, than with a hot pudding. Yummy, doesnt even explain the devineness of this desert. Really easy to assemble you can make this on the night of a dinner or even take the ingredients to make at someones house. All you need is either ramekins, pudding moulds or ceramic cups, electric mixer and a dish. And your set. Plus the few ingredients to take along. Trust me it is worth it. 3 whole passionfruit pulp ( you can use canned pulp equivalent to 1/3 cup. 60g butter, softened 2 eggs separated. ( keep the whites) 160g caster sugar 1 zest and juice from lemon 50g plain flour, sifted. Milk Pre heat oven to 170 Degrees C. With an electric mixer, cream butter and sugar. Add egg yolks, one at a time. Stir in flour, zest and juice to mixture. In a cup place passionfruit pulp and add milk till cup is full. Pour into mixture and stir till combined. Wash your beaters clean. In your mixer beat your egg whites till soft peaks form. Gently fold into batter. Grease your moulds with butter. Place into a shallow dish. Pour your mixture into you moulds evenly. Boil your kettle. Pour boiling water into your shallow dish till half way up the moulds. Bake in the oven for 25-30 minutes or till golden. Serve warm with ice cream. This will not disappoint the pallet. You can alter the lemon with lime if preferred or omit. Enjoy!!
