Paul Canales, he leads off this months Hits & Flops, finding, much to his surprise, a big hit with arroz negro, but an unfortunate miss in his classic version of paella Valenciana with rabbit and snails. You have to admit defeat sometimes, but I havent yet with this. I may bring it back. I still have five cans of snails. Other chefs singing praises and woes this month include Myers+Changs Karen Akunowicz with her Korean barbecue Sloppy Jo, Matt McCallister from FT33 in Dallas bringing out smoked potatoes with maitake mushrooms, chile Kewpie mayo & savory herbs, Del Posto Ristorantes pastry chef Brooks Headley lamenting a beet creamsicle, and Kevin Sbraga making as many country-fried lobster tails with okra, sprouts & onion from his Philly posts, Sbraga and The Fat Ham.
