Peanut Butter Cookies. Here they are Susan. Made these the other night, they are perfect for someone who likes the crunch to a peanut butter cookie... Cream 1/2 c. soft butter,1/2 c. brown sugar and 1/2 c. crunchy peanut butter. Add 1/2 tsp. vanilla and 1 egg,beating till fluffy. Stir in 1/2 tsp. baking soda and 1/4 tsp. salt. Blend in 1 1/2 c. flour.Mix till stiff dough forms. Shape in walnut sized balls.Place on lighty greased cookie sheet.Press with fork to flatten. Bake at 375 for 10 minutes.(I took mine out at 9 minutes and they were perfect.
