Peas Theme recipe- ---Mutter Tahari , its a type of veg biryaani from UP Ingredients for Mutter Tahari : Rice-1cup long grain basmati Cauliflower (florets)-1cup Half cup chopped carrot 1 cup green peas boiled ,Tip- can add 2 pinches sugar while boiling , it helps in retaining green colour of peas Onion -1cut into thin slices Cumin seed-1/4 tsp Mustard seed-1/4 tsp Dalchini stick 1 inch Half tsp garam masala Asafotida 1-pinch Turmeric powder-1/2tsp Tamarind pulp-1tbsp Ghee-1tbsp 2 tej patta , 2 badi kali elaichi, 2 kali mirch sabut , 2 laung whole red chilli-2 Coriander leaves chopped for garnish Method Wash rice and drain the water and keep aside. Heat ghee in pressure cooker add dry chilly, mustard seed, cumin seed,hing, tejpatta, elaichi, laung,kalimirch, dalchini stick, sauté for few seconds. Add onions and cook till turn little golden brown. Add cauliflower, carrot and turmeric powder, salt and mix it well. Now add washed rice and cook for 1-2 minutes. Add 2cups of water and tamarind pulp. Once its start boiling give a nice Stir otherwise veggie and rice will stuck in the bottom. Close the lid of the pressure cooker and cook till one whistle comes. Turn off the heat. Let the pressure go on by itself.Add boiled peas and simmer for 1 -2 mins , to retain the green colour of peas. Garnish with coriander leaves. Serve hot with any raita. Enjoy!!!
