Pepper roti (you can adjust the ingredients to your liking) 3 cups all purpose flour ½ tsp salt 3 tsp baking powder 1 tsp sugar 11/2 tbsp of butter or margarine 1 tbsp of cookeen (mix the butter with the cookeen) 1 tbsp oil to brush tawah/ baking stone Enough water to make a soft dough start with 1 cup and add as you go along Filling 1 hot pepper chopped finely add more or less if you like 1 cup grated potato(alloo) 2 cups of grated cheese ½ cup of shredded carrots 2 tsp of grated garlic 1 sm onion chopped finely (optional) 2 pimento chopped ½ cup sweet peppers Few leaves of shado beni (bandania) Salt to taste Dough: Note 1) First we need to make the dough for the roti (Paratha). In a large bowl mix together the flour, salt, baking powder and sugar. Then start adding the water and knead, add more water as you go to form smooth soft but not sticky dough. 2) Cover the dough with a damp kitchen or paper towel and let it rest for 30 minutes. Then divide into two dough balls to fit the size of your tawah/baking stone., sprinkle some flour on your surface and place your dough ball and roll out with rolling pin, paste or brush half of the butter and cookeen mixture all over, sprinkle with some dry flour and cut from the middle come out to the end. 3) Roll and shape into a cone and tuck in both ends. Let it rest again for 30 to 45 minutes. 4) Mix together all the ingredients for the filling 5) Roll out one of the dough ball flat, brush the tawah with a little oil and place the roll out dough, sprinkle some grated cheese, add the filling, spread evenly but not to the edge, top with a bit more cheese. 6) Roll out the other dough same size, place on top of the one with the filling and seal the edge with a fork. Let it cook for about ten mins on low heat, flip it, and let it cook another ten minutes on the other side or until it starts to get brown.
