The Center for Environmental Health said yesterday that Pepsi’s caramel coloring still poses a risk to consumers due to its high levels of carcinogen. The new revelation comes four months after Pepsi and Coca-Cola had previously promised to change its formula to become compliant with a new California law stipulating that certain drinks with high carcinogen levels come with a warning label. The carcinogen in question, “4-Mel," is known in full as 4-methylimidazole, and can form when certain foods are being cooked; as such, several foods may contain 4-Mel, even in trace amounts. According to the Center for Environmental Health, Coke products no longer contain dangerous amounts of the substance, while Pepsi products sold outside of California still contain the chemical. In its defense, Pepsi said its suppliers of caramel coloring are making changes to their manufacturing procedures to reduce 4-Mel content; the changes have supposedly been carried out in California, but they will only be finished in the rest of the United States by February of next year. Pepsi did not provide any timeline for the completion of the international process. The drink maker had also stated that the U.S. FDA and other international regulatory boards have no complaints about the safety of Pepsi’s caramel coloring. Meanwhile, Coca-Cola has moved to a modified type of caramel in U.S. markets outside of California, one that does not contain 4-Mel. Coke added that all of its products, regardless of modified caramel content, are safe in the eyes of regulatory agencies. The Center for Environmental Health had previously assigned Metairie, La.’s Eurofins Analytical Laboratory to conduct further tests on Pepsi and Coke products in May for products sold in California, and for those sold in other parts of the U.S. in June. According to the lab’s findings, 4-Mel wasn’t present in California products, and did not turn up in nine out of ten Coke products sold outside of California. It did, however, detect 4-Mel levels some four to eight times higher in all ten non-California Pepsi products than those sold within the state.
