Per request, here is my Lazy Womans Cast Iron Upside Down Peach Spice Cake 1 stick butter 1 cup brown sugar 1 can peaches, drained Spice cake mix plus eggs and oil per box directions. I use packaged egg whites in lieu of eggs and end up with a pretty fluffy cake which I like with the richness of the rest of the dish Pecans (optional) Ive made this with less butter, less brown sugar, different fruit, with and without nuts (though I like it better with nuts) so make this your own. Ive heard it even works with fresh apples or bananas. Use a different flavor mix if you like. Make it in a Dutch oven over the coals if thats your thing. Preheat oven per cake mix instructions. Mix up cake mix according to box directions, set aside. (If youre quick you can dry doing this while the butter melts on low.). On stovetop, preferably in a seasoned cast iron skillet, melt butter. Add brown sugar, stir to melt. Immediately sprinkle pecans and place fruit in a spiral design in bottom of pan. Quickly, evenly pour cake mix over fruit. Use a potholder to transfer the skillet to the oven. Bake as directed on cake mix, test for doneness, dont overbake. When done in the center, remove from oven, and IMMEDIATELY run a knife around the sides, place a plate over the cake and use potholders to flip it over and jiggle the skillet a little so it all comes out of the skillet, upside down, on the plate. Lift off skillet. Served with whipped cream or ice cream while still warm is best. Do not overcook the brown sugar and butter, so move quickly through the steps. If you need help flipping it, have that help ready as you take it out of the oven. If you let it set the brown sugar will glue your cake top into the pan. Still delicious, but UGLY.
