Picked up my 5-year-old early from preschool today for some requested father/son pizza making. We made personalized pizza for each family member. 5-year-old: vegan pepperoni & Daiya shreds. Mom & dad: chickpeas, artichoke hearts & roasted butternut squash (I added Daiya shreds and vegan pepperoni to mine). 2-year-old: kimchi, halved grapes & Daiya shreds. Each pizza was thoroughly enjoyed (though mom did pick out her chickpeas). Served with a hearty salad of kale, purple cabbage, cucumber, sun-gold tomatoes, quinoa, chickpeas & sunflower seeds. Our boys prefer salad to most cooked veggies!
