Pizza dough: (Im going to post how I do it, because I use bread machine yeast or quick yeast because Im lazy and dont like to mess with active dry and making sure my water is the right temp etc etc etc) 1 C water 1/4 tsp sugar 2 1/4 tsp bread machine or quick yeast 3 C flour 1 tsp salt 1 T olive oil Combine dry ingredients and yeast in a bowl, make a well, add water and oil, mix til ball forms or starts cleaning side of bowl, dump on lightly floured surface and knead and turn for 5 to 8 mins (make your hubby take over at the 2 min mark when your arms are dying if you are out of shape like me lol) til smooth and elastic. Throw it in a bowl sprayed with no stick, flip it over once to grease both sides and cover with towel and let it take a nap and get fat for an hour or 2 depending on whats convenient for you ;-) Once risen, divide in half, roll out into 2 round flat pizza mat like things, fill half with sauce and toppings, leave at least 1/2 on edge so you can seal with a fork. Bring 2nd half over top and seal edge, bake at 425 for 15 mins or til golden brown (I throw corn meal on bottom of a cookie sheet and lay it on it to keep from sticking. Let it rest for a min, cut it in half, try not to burn your mouth trying to get a bite before its cool enough lol
