Polynesian Spam purses. Purses will be spring roll rice wraps, strategy being that they are transparent, that way the judges will be able to SEE the nasty SPAM through the wrap. Also, Im going to leave the tops of the purses exposed with (er) chunks of SPAM on top for them to see. Will garnish with a fresh basil leaf tucked into the back of each purse, sticking up out of the top. Will tie off with blanched chives, then place atop a small mound of Thai sweet chili sauce. Will refrigerate this mix tonight, heat just enough to remove the chill in the morning, then stir in some fresh chopped basil. Apparently, fresh basil is the herb in a mix like this. Going to work on presentation platter now. Oh, and Lord willing, the SPAM letters will be placed at the base of each purse to spell Oh, SPAM purses OR, I could say Do SPAM purses. Which should I go with?
