Poor old Thermo doesnt even get a night off when we have a roast for dinner! I use my Thermomix to get the crispiest spuds & most delicious broc/cauli cheese. Crispy Roast Potatoes & Broccoli & Cauliflower Cheese Ingredients - 60g cheddar cheese cut into small cubes - 40g Parmesan cheese cut into small cubes - 50g bread - 6 sprigs fresh parsley - 500g potatoes quartered - 400g broccoli florets - 400g cauliflower florets - 500g water - olive oil - sea salt - 30g butter - 50g flour - 500g milk 1. Preheat your oven to 180 deg. 2. Place cheddar cheese into jug & grate on 5sec/sp10. Set aside. 3. Place parm, bread & parsley into jug & grate on 5secs/sp10. Set aside. 4. Place water in jug. Put potatoes in Varoma dish. Steam 10mins/Varoma/sp2. 5. Arrange broccoli & cauliflower onto Varoma tray & place on top of potatoes. Continue steaming 10mins/Varoma/sp2. 6. Remove Varoma from machine. Set tray with broc & cauli aside. 7. Leave potatoes in Varoma, pour over a generous amount of olive oil & salt, place lid back on & shake for ~ 10secs to bash up the potatoes a bit. 8. Pour potatoes into roasting pan & roast for 40mins. 9. Arrange broc & cauli onto a prepared dish. 10. Place reserved cheddar cheese, butter, flour & milk into jug & cook 7mins/90deg/sp4. 11. Pour white sauce over broc & cauli. Sprinkle with reserved Parmesan, breadcrumb & herb mix. 12. Cook in oven for the final 10mins the potatoes are cooking.
