Pork with Beer & Onions Serves 16 6 lb Pork Loin 1 ½ oz Butter For sauté. 1 ½ oz Vegetable Oil For sauté. 4 lb Yellow Onions Julienne. 1 ½ tbls Garlic Chopped. 3 bottle Dos Equis Beer 1 qt Veal Stock 2 oz Tomato Paste 2 tbls Pepper 3 oz Cider Vinegar 1. Sear pork in butter and oil, reserve. 2. Saute garlic and onions in same oil till tender. 3. Deglaze with beer, stock and vinegar, add tomato paste, simmer 5-10 minutes. 4. Add loins, bring to a boil, put in a 350 degree oven, covered, and simmer till meat is 160 degrees internally. 5. When done, reduce sauce to proper thickness; thicken with slurry if needed. 6. Adjust seasonings.
