Pork with Bitter Gourd & Bamboo Shoots Travelling in the North-east, I pick up new tastes and like to experiment with them in my kitchen. Heres one of them. I loved this. I cut karela and soaked in salt water. Did not want the bitterness to overpower the flavour of the pork or bamboo shoots. Made a fresh paste of soaked red chillies and lots of garlic. Then I put the pork to boil with the chilli paste and sliced onions. Two-three whistles and I took it off fire. Then I reduced the soupy water and added the karela. Cooked it till all water reduced and the pork has started frying. Added the bamboo shoot and tossed around for a few mins and took off fire with Thai chillies.
