Prince Edward Island Seafood Seasonings Tasty Haddock Chowder! This easy recipe requires patience as it needs to cook about an hour to marry all the flavors. But definitely worth making!! 1 1/2 pounds of fresh haddock fillets 1 medium sweet Spanish onion 4 large PEI potatoes (russet potatoes are excellent) 1 to 2 large carrots (peeled and diced) 1/4 cup of fresh or frozen peas 2 tablespoons of butter 2 cups of cream (either half n half or whipping cream) 1/2 teaspoon of course sea salt 1/2 teaspoon of freshly ground black pepper 2 sprigs of fresh thyme 1/2 cup of brandy or white wine (optional) 2 tablespoons of fresh parsley chopped 1 teaspoon of Prince Edward Island Seafood Seasonings Cavendish Blend In a dutch oven or large pan saute onions and butter for 2 minutes over medium-low heat. Add potatoes and carrots and cook for another 2 minutes. Be careful not to burn the onions! Add enough water to cover mixture and bring to boil. Let boil for 10 minutes. Add haddock fillets and cook for 5 minutes. Do not cook any more than 5 minutes!! You do not want to overcook the fish! Remove the fish from the broth and shred. Add the shredded fish, cream and peas back into the broth. Season with salt, pepper and fresh thyme and cook on low or simmer for 20 minutes. Do not allow chowder to come to a boil! Remove pan from heat and add sherry or wine. Garnish with fresh parsley and serve with homemade crusty bread.
