Pumpkin Bars 2 cups pumpkin (canned, or cooked and pureed) 1 ½ cups sugar ¾ cup oil 4 eggs 1 tsp. vanilla ½ tsp. salt Beat together in mixing bowl Mix in: 1 cup white flour 1 cup whole wheat flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. ground cinnamon Pour into lightly greased 11x17 inch jelly roll pan. Bake in preheated oven at 350F for 25-30min. This came out really well. I didn’t have a jelly roll pan so substituted cake pan. It came out more consistency of cake than “bars” but we liked it. Great with coffee! Also you can substitute cooked and pureed winter squash for the pumpkin.
