Quiche Lorraine Ingredients 100g plain flour 50g Margarine 40-45ml Water( chilled) Filling 1 Bacon rasher 1 Egg 75ml Milk 37.5g Cheddar cheese Seasoning to taste 15ml Chopped parsley Garnish Sprig of parsley Method 1) Prepare the pastry: Rub the margarine into the flour until the mixture resmebles breadcrumbs. Add sufficient cold water to form a stiff dough. 2) Lightly flour the table and knead the pastry. 3) Roll out the pastry and line a 15cm flan ring. Leave to relax for 5 minutes and then trim. 4) Cover and chill in the refrigerator for about 15 minutes. 5) Prepare the following ingredients for the filling: Bacon- cut into small pieces using kitchen scissors. Cheddar cheese- grate. Parlsey- Chop finely. Beat together the eggs with the milk. 6) Scatter the bacon over the pastry base and then place the cheese on top. 7) Pour the egg mixture into the flan. 8) Sprinkle with the chopped parsley. 9) Bake for about 20 minutes until well risen and golden. 10) Serve granished with parsley.
