Quick 411 on Sushi, first there is different types of sushi: Nigiri: means hand formed(best), Maki: (roll) what you get in most restaurants and at the store(noooooo!!!). Chirashi: aka scattered, items served over vinegared rice, Stuffed : which will have egg crepe(chakin) and tofu(inari) and of course the ingredients of choice for stuffing. Oshi: vinegared fish and rice, mostly they use a wood form to do them. Sashimi. Honestly I never tried the Sashimi so I cant tell you what it has or how its prepared. Also be advice that there is beef Sushi called Wagyu( Japanese cow) BUT ask because sometimes it will be horse meat. And yes Wagyu can be served cooked or raw. And if you eating Fugu (aka Torafugu orTiger Blowfish ) make sure they have a license to prepare and sell Fugu ..and my hats off to you if you do. Hope this helps next time you order sushi.
