Quinoa pizza base. I made this alternative pizza base yesterday and it got thumbs up from my friends. This is good if you are cutting all flour out of your diet but fancy a pizza. Ingredients: 300g Quinoa, Rosemary, Thyme, garlic, chili, salt and pepper. Place the Quinoa into a bowl and add water so it covers the Quinoa. Cover the bowl with clingfilm and leave to soak for 3 to 8 hours. After 8 hours drain the Quinoa and add all the ingredients to a blender with 125ml of water. Blend until a smooth paste. Takes quite a long time. You do not have to use the ingredients I did you can add your favorite flavors to the base. Once it is blended divide into to portions. To cook: Heat a frying pan on the hob until it smokes, take off the heat and add a touch of olive oil, add one portion of the mix to the pan and spread it around the frying pan. Turn the hob down to its lowest heat and place the pan back on the hob and cook for 10 minutes. Flip it over and cook for another 10 minutes. Once it is cooked place onto a pizza tray, stone and add your tomato sauce and your favorite pizza toppings. Turn the oven on to its hottest temperature. I added, mushroom, peppers, spring onions, Anchovies and avocado. I cooked it in the oven for 5 to 7 minutes and then served with rocket.
