Quinoa, tomato, avocado pear salad. 1 cup quinoa , 1 tsp oil, 1/2 cubed pear, cubed tomato, 2 cups vegetable broth, 1/4 cup apple cider vinegar and 1/2 tsp salt. Add oil to pot , add quinoa , toast for 3 minutes . Add broth and 1/2 tsp salt, bring to boil and then simmer for 20 minutes. Cool cooked quinoa and add to avocado and tomatoes . Add vinegar and enjoy! Great side dish..high in protein and antioxidants.
