#RECIPE REQUEST# Chicken/Lamb Curry (Marriam Sayed) Ingredients: 1 whole Chicken/1kg Lamb, cut into pieces 2-3 Onions sliced/chopped 1tsp Ginger n Garlic paste 2tsp Chillie powder(add more if u prefer hotter curry) 1/4 tsp Tumeric Powder 1tsp Coriander n Cumin powder 1tsp Garam masala (available at spice shops/picknpay/checkers) 2tsp Salt or adjust according to taste Sprig of Curry Leaves(if available) 2 Tomatoes chopped 3 Potatoes cut in halves 1/4 cup sunflower oil 1/4 cup Fresh Coriander for garnish Method: ~cut,wash n allow meat to drip ~rub the ginger n garlic paste unto your meat,coating well ~heat oil in pot, add sliced/chopped onions ~once onions have turned a light golden brown, add in your spices,let in fry a short while with onions n curry leaves ~now add to the pot, the meat,mix well with the spices n onions ~add in enough water to cover meat ~cook on medium heat for 20mins,then add chopped tomatoes ~once tomatoes have blended into curry(about 10mins) add your potatoes ~may need to add little more water as you cook, lower heat,n allow potatoes to cook ~when meat n potatoes are both soft(meat can be felt by testing a piece with fingers/potatoes with knife inserted into it), adjust if salt is less ~once oil come up to surface,curry is done, remove from stove, n garnish top with chopped fresh coriander. ~Enjoy with Rice/Bread/Roti *ps* Chicken cook faster than lamb,so times may vary,n with chicken curry u can sprinkle a little more Garam Masala on top of curry when done,then fresh coriander!
