RICETTA: BRACIOLE Make this great recipe from Southern Italy, using our Risoli die-cast aluminum, non-stick sauce pot! #italianexcellence 1- Lets prepare the soffritto (extra virgin olive oil, onion, garlic, carrot, and celery, finely chopped). 2- Lets fill the pounded beef cutlets with parmigiano, parsley, chopped carrots and minced garlic. 3- Lets roll up each cutlet and if necessary lets tie them with toothpicks. 4- Add the braciole to the soffritto. Let it cook for half an hour. Add a glass of red wine and simmer for a minute. 5- Stir in the tomato puree and cook for 3 1/2 hours. (If too dry, add a half cup of water; if too loose, remove the lid to finish thickening). Suggestion: serve it with orecchiette pasta!
