ROASTED COUSCOUS STUFFED CAPSICUM, ROAST VEGGIES & SALAD. INGREDIENTS (for the capsicum) Capsicum Fetta cheese Red onion Spring onion Vegetable Stock Oil Salt & Pepper COOKING INSTRUCTIONS 1) Preheat oven for roasting 2) In a bowl, mix together Couscous & vegetable stock until done. 3) Once Couscous is ready, mix in chopped fetta, chopped Red Onion & chopped Spring Onion. 4) Chop Large Capsicum in half, take out seeds - coat in oil & Salt & Pepper, fill each Capsicum half with CousCous mix. 5) Put in oven for roasting! (I cut up a bit of sweet potato & carrot for a little roast side veggie for mine!) 6) While roasting - make salad! I kept mine basic, mixed spinach leaves with cherry tomatoes, red onion, avocado & spring onion, tossed in balsamic vinegar! Super easy - super yummy - super healthy!
