Rajasthani makai k dhokle Ingredients * Maize flour (makai ka atta) - 250gm * Ginger Paste (Adrak) - 1 teaspoon * Green chilli paste (Hari mirch) - 1 teaspoon * Red Chilli powder - 1/2 teaspoon * Asafoetida (hing) - 1/2 teaspoon * Azwain - 1/2 teaspoon * Sabut dhaniya - 1/2 teaspoon * Saunf - 1/2 teaspoon * Papad khar - 1/4 teaspoon * oil - 3 teaspoon * Salt to taste * Deshi ghee * Coriander Leaves (Dhaniya) - A Few * Method for Makai Dhokla: * Mix the maize flour with all the above ingredients and add luke warm water to make a smooth dough. * Make small small dhoklas like a ring (balls with holes). * Steam it in a big container. OR if you dont have anything to steam.Take 2-3 Glass of water in a big pot. * Boil it.Cover it with a Strainer( you can also use aata channane ki channi) and put the dhoklas on it.Cover it with 1 plate. * Check the water level in between. * Garnish Makai ka dhokla with the chopped coriander leaves and pour deshi ghee on it. * Serve it hot with mixed dal with green chutney. NOTE : Always have it in lunch as it needs too much water for digestion.
