Raspberry & Nectarine Marmalade with Chilies My husband, says most store Jelly is Girl jelly. Sweet and thats about it. He feels hes a MANLYYY MANNN and therefore must have his Jelly spicy. So okay.. Here ya go honey!! This one is for you Amadeus Achenar. Directions. 2 cups of Raspberries 3 cups of Peaches Red Pepper Flakes 1 box of Pectin 1/4 Cup of Lemon Juice 2 1/2 cups of Sugar Lemon peel (rind) To taste. Some people like a lot of peel in their marmalade and some like very little so this part is up to you. Doesnt effect the recipe. Directions: Prepare, canner, jars and lids. In a large saucepan, combine the raspberries, red pepper flakes, lemon juice, peaches, lemon peel and sugar and bring to a boil. Turn down and simmer for 20 mins till the fruits start to fall apart. Usually 20-30 mins at a simmer. bring back to a boil. Add pectin. And bring to a boil again. Keep at a boil for 1 mins. Try to make sure the temperature reaches 220F to ensure the pectin binds with the sugar to gelify. Add hot marmalade into hot jars. Tighten girl tight not man tight. Process for 10 mins. Remove from heat and let jars sit in water for 5 more minutes. Next, remove from water, cool and store. ****Note to not waste your lemon.. I throw mine down the garbage disposal to have a nice fresh smell to the kitchen LOL
