Rebeca asks: Im ordering a whole pig and I was wondering if you have advice on what non-traditional pieces I should ask for? I know to get the shank, jowls, fat and neck bones....but are there other things I should ask for? are there more marrow bones Im not thinking of? Should I get the liver or other organs? If so...what would I do with them? I would appreciate any guidance as Im still new to the whole tip to tail eating thing. Any suggestions for Rebeca? My answers are in the comments.
