***Recipe*** ~CHICKEN BALTI~ Serves 2: Ingredients ~1 lb skinless, boneless chicken breasts, cut into chunks ~1 tbsp lime juice ~1 tsp paprika ~1/2 tsp chilli powder ~1.5 tbsp olive oil ~1 medium green chilli ~tsp cumin needs ~1 medium onion, peeled and grated ~2 garlic cloves, peeled and finely chopped ~1*2.5cm piece of ginger, peeled and grated ~1 tsp turmeric ~1 tsp garam masala ~250ml passata ~1 red pepper ~1 Tomato, peeled and chopped ~100g/4oz spinach leaves ~Fresh coriander, chopped Method: 1. In a bowl, mix the chicken, lime juice, paprika, chilli powder and pepper. Leave to marinade for 30 minutes. 2. heat 1 tbsp of the oil in a pan. stir fry the cumin needs and chilli. Stir in the onion, garlic and ginger and saute for 3-4 minutes until the onion begins to brown. add the remaining oil. add the chicken and stirfry for 2-3 minutes. 3. In a bowl, mix the turmeric, cummin and garam masala together. add to the pan and lower the heat. Cook for 2 mins 4. Pour in the Passata and 150ml water then the pepper. When it begins to bubble, lower the heat and simmer for 20 minutes or until chicken is tender. 5. Stir in the tomato and simmer for 3 minutes, then add the spinach. remove the chilli before serving if you prefer. 6. Serve with fresh coriander. Enjoy :) :)
