Recipe Of The Day: spiced apple & butternut squash soup Ingredients: 1 large butternut squash 2 apples 2 carrots 1 bottle organic apple cider (i used wyld woods) 2 cans coconut milk (idealy organic) 1tsp nutmeg 1tsp cinnamon Instructions: de-pulp the butternut squash and cut into small chunks core the apples and cut into chunks likewise with the carrots throw all ingredients together, either in a slow cooker or pot for slow cooker leave on low for 6hours then blend for pot low simmer for 3-4 hours (or until soft) then blend (i recommend an immersion blender for the blending) Optional if you have the luxury of a second slow cooker i like to put a load of chicken breasts in with enough coconut milk to cover and just leave it on low for the 6hours along side the soup. or you can put chicken in a pot and cover with coconut milk bring to the boil, then simmer for 5 minutes, followed by turning off the stove and leaving to rest in the pot of coconut milk for a further 25minutes to allow the residual heat to cook through. i like to put a chicken breast into a bowl, shred it all up and then top with generous amounts of soup! this one is quite sweet and the apple really comes through, oh and it will do about 6 generous servings, enjoy!
