Recipe from Conor Tuite..(thanks Conor) Healthy fried rice: Boil two cups of rice and leave in fridge over night 1 large onion 2 carrots 1/2 spring onion Frozen peas Sweet corn 2 garlic cloves Finely chop onion carrot and spring onion and garlic. 1 tbsp paprika 1/2 tbsp chili powder 1/2 tbsp cayenne pepper Salt and pepper Add frylight to wok or pan, take cooked rice from the fridge and fry for 3-4 mins. Add all other ingredients and stir fry for an additional 3-4.
