Recipe: homemade Muscle Meat meatballs in tomato sauce (serves 2 / makes 12 meatballs) For the sauce: 2 large tomatoes 1 red onion & 1 white onion 1 chilli 7 mushrooms 1 carton tomato passata 2 tablespoons heinz zero sugar ketchup splash lee & perins 2 stock cubes salt, pepper, 2 cloves garlic small bunch fresh coriander 2 tbsp extra virgin olive oil 1tbsp rice flour to thicken For the meatballs: 600g muscle meat turkey, chicken or beef mince 2tbsp ufos oil 100ml egg whites handful of fresh coriander leaves salt, pepper, chilli to season, lemon juice To cook the sauce: 1) add oil and 200ml water to the pan. Chop the onions and cut the tomatoes & mushrooms into quarters and add them all to the pan to simmer and soften Add the stock cubes, salt, pepper, garlic, chilli and coriander 2) once soft (after simmer ing for around 10 minutes) add the rest of the ingredients apart from the rice flour. Simmer with a lid on on a very low heat while you prepare the meatballs. For the meatballs: 3) Put all the ingredients into a food processor. Pulse until totally smooth and mixed 4) using your hands squash the meatballs into balls and place into the tomato sauce so they are 3/4 covered 5) once all the meatballs are in the sauce put the lid back on and increase the heat slightly for 10 minutes 6) once cooked remove the meatballs from the sauce and then add the rice flour to the sauce. Stir thoroughly for another 3 minutes and the sauce ail thicken nicely. Serve with sweet potato / swede or cauliflower mash (zero carb option) or serve with muscle finesse Ciao Carb protein pasta!
