Recipe of the month - May North African Salad Ingredients Base: 6oz/175g long grain rice 1 small cucumber (sliced) 2 medium bananas (peeled and sliced) 1 avocado (peeled and diced) 1 tablespoon pinenuts or almonds 4 tablespoons olive oil 4 tsp. lemon juice large pinch ground coriander large pinch ground cumin salt and pepper Method: 1. Cook the rice in boiling salted water for 15 mins. or until it is tender. Drain and allow to cool. 2. Put the rice, cucumber, bananas, avocado and pinenuts in a salad bowl and stir well. 3. Mix together the oil, lemon juice, coriander, cumin, salt and pepper in a bowl and beat well. 4. Pour dressing over the rice mixture and mix well. Serve with tuna pate. (2 tablespoons of raisins can be used in place of the avocado)
