Red Bell Pepper Raita !! Recipe courtesy - Beena Babita Kulkarni frm another food group Made this based on the capsicum raita recipe .... which was posted a few months back by me over here..... Today thought of trying a variation with Red Bell Pepper... Sharing the recipe here with all my friends ... Ingredients :- Red Bell pepper - 1 medium sized pepper used here by me ( u can adjust the number of red bell peppers according to yr family) Dry Roasted peanuts powdered - 2 tbspns Curd - 1 big cup( U can adjust according to yr taste) Red chilly powder - 1/4 tsp Salt to taste Roasted jeera pwdr - 1 or 2 pinches Fresh coriander leaves - for garnish For the tadka - Oil -about 1 tspn, little mustard seeds, jeera, asafoetida/hing &curry leaves. Method :- Roast the Red Bell Pepper on the gas on open flame till fully done from all sides, u need to keep turning them on all sides to see that they are done (like we do to make baingan bharta) After they cool down, cut them into two halves...de-seed them if any seeds there...then cut them into small pieces add salt to taste, spices, peanut powder ....and the curd... Stir then keep aside... In a small kadai/tadka pan.... take oil, splutter some mustard seeds, jeera, curry leaves, add little asafoetida and add it to the red bell pepper... curd mixture, mix well .....garnish with chopped coriander leaves ....and serve with roti.... or Simple Dal -chawal or Pulao/Rice varieties....
