Red Velvet Cake 2 ½ c. all purpose flour 1 tsp soda 1 tsp salt 1 ½ c. granulated sugar 1 c. buttermilk 1 ¾ c. vegetable oil 2 lg. eggs 1 tsp van. Flavoring 2 oz red food coloring 1 tsp vinegar Preheat oven 350 deg. Sift all dry ingredients together. Cream sugar, buttermilk, oil and eggs. Blend dry ingredients into this mix. Add vanilla coloring and vinegar. Turn into 3 greased and floured 8 in. cake pans. Bake in preheated 350 deg oven for 30 to 35 min. Cool and frost with cream cheese icing. Optional ½ c. chopped nuts sprinkled over icing. Frosting: 8 oz. softened cream cheese. 1 tsp van. ½ stick margarine or ¼ c. butter 1 box powder sugar Beat cream cheese add sugar and flavoring until smooth. For more spreading consistency add 2 tsp milk and blend well. Enjoy.
