Reflection on Culinary Choices and Lazy Lazeez Lunch :) ********************************************************************** A one-pot Yogurt marinated Chicken Dish Love visiting the local Farmers Market where the local farmers showcase and sell their naturally raised produce. For a foodie like me who enjoys selecting fresh/colorful ingredients to bring variety and vibrancy in my regular menu with the conscious and cautious awareness that the diet is nutrient rich and balanced, this is the time of the year I wait for as I easily get attracted by the colors and freshness of the plethora of fruits and vegetables….so soul satisfying for me I must say and of course meditative :) Growing up in the Assam, I had only associated the red, reddish-orange color with tomatoes though I was aware that there were many varieties (mini/maxi, baby/big) of them. My parents were/are never much of a foodie and hence I never saw many variations of the fruits and vegetables except the basic regular habitual ones. When I landed here, the variety of natural produce amazed and amused me. Learnt that there are purple potatoes, there are rainbow colored carrots, there is a purple variety of cabbage/cauliflower and even garlic had multiple variations. Who knew that tomatoes came in many colors (pink/red/orange/yellow/green/magenta/brown....you name it and maybe it grows somewhere) leave alone the 100s of shapes, sizes and varieties (Heirloom/Roma/Cherry/XYZ). When hubby took me to grocery shopping for the very first time here in the US, I was so confused seeing the options I had for something as simple as tomatoes. Wasn’t much of a foodie then and then seeing the colors and choices available readily here and now even in India and the curiosity to try/test/taste them transformed me into a foodie and my pursuit continues till I can…..:) Today’s lunch menu included a side of a few fresh slices of heirloom tomatoes (thanks to the local farmers) which went well with my main dish of yogurt marinated chicken cooked in its own juices and rice topped with a side of oil tossed green peas. Very simple one-pot dish and yet so fulfilling. Recipe for the chicken: Very simple one pot meal with so less oil/no oil *************************************************************************************** Ingredients: • Chicken – 1 lbs: Thighs and Breast meat (cut in portions of your choice) • Onions – 2 Medium Size: I used the yellow onions and finely chopped them • Ginger – 1 inch: Pureed • Garlic – 5 cloves : Made into a fine paste • Yogurt – ¾ of a cup: I used thick non-fat Greek yogurt. Hung Curd might be a good substitute • Pinch of salt • Garam Masala – 1 tbsp (an equal mix of cardamom, cinnamon, cloves) • Smoked Paprika Powder – 1 tbsp • Cooking oil – 1 tbsp : I used olive oil since I did not require to heat the oil. I have made this without oil and the compromise in taste isnt significant here. • White Pepper Powder – 1 tsp • Dry Roasted Cashews – 8 • Raisins – 8 Method: 1. Clean the chicken well and then marinate the chicken with all of the above for about 2-4 hours. 2. Warm a skillet, lower the heat and transfer the marinated chicken into it. Stir well. Cover and allow the chicken to cook in its own juices and in the water released from the yogurt in very low heat. Took me about 1.5 hours. I kept stirring occasionally. Adjust the heat if needed. Also add luke warm water if needed. Also adjust the salt per taste. 3. You can choose to cook this in a slow cooker or crockpot if you have one. Just adjust the time accordingly.
