Refried Beans 4 C. pinto beans (cooked) 4TBSP butter 1C. finely chopped onion 3 tsp cumin 2 tsp paprika 2 tsp sea salt 1 tsp pepper milk, bean broth or water as needed In large pot or sauce pan saute onions and garlic in butter til soft and tender. Add beans it beans are completely dry use what ever liquid your using, bring to a slow simmer. Turn heat down to low and cook 10-20 mins. Stir occasionally to prevent burning and sticking. Then place in blender, food processor, or use hand mixer, or potato masher and mash to desired consistency ad liquid as needed. I made a triple batch I used dried pintos I got from the farmers market last yr. I soaked them overnight them cooked them this am I drained the broth and saved for later when mashing them. I then took the leftovers of the broth an put in freezer to use later. ** Helpful hint* If you cook your veggies in water save the water you drain off them freeze and and use it when you make soup A LOT of your nutrition/vitamins from the veggies is in that broth your throwing away. Why not benefit from it!! :)
