Refrigerator Bran Muffins 1 15oz. box of Raisin Bran 5 cups plain flour (presumably All Purpose) 3 cups sugar 5 tsp. baking soda 2 tsp. salt 4 eggs, beaten 1 quart buttermilk 1 cup melted shortening (Id use butter, myself) Combine the first five ingredients in a large bowl. Make a well in the center of the mixture. Add eggs, buttermilk and shortening (butter), stir just enough to moisten the dry ingredients. Cover and store in the refrigerator until youre ready to bake, up to 5 - 6 weeks. To bake: Spoon batter into muffin tins; fill 2/3 full. Bake at 350F for 20 minutes Makes 5 1/2 dozen muffins.
