Rice Pudding (for Kimberley) Ingredients 1/2 cup uncooked rice - cook as directed 1/2 cup sugar 1 tablespoon corn starch 1 dash salt 2 eggs, separated 2 1/2 cups milk 1 tablespoon lemon juice 1/2 cup raisins cinnamon to taste Directions Heat oven to 350°F Blend sugar, corn starch and salt together in a small bowl. In a medium bowl, beat egg yolks slightly, then add milk. Mix dry ingredients into wet ingredients, and beat with a mixer until fully incorporated. Stir in rice and raisins. Place mixture into greased casserole dish. Put casserole dish into larger pan with approximately 1 inch of water. Bake for 1 1/2 hours, stirring occasionally, adding cinnamon after 15 minutes.
