Roasted Carrot and Basil Soup My sister gave me the cookbook in the pic, and it has a recipe for carrot orange soup. But, in that recipe the carrots are boiled. I love the depth of flavor that comes from roasting veggies. So, I followed the recipe that I will link at the end of this post. The cookbook recipe called for orange zest. So, it gave me the idea to add orange to the Jamie Deen recipe. On some of the larger carrots, I cut the thicker parts in half so they would all cook at the same rate. I puréed the cooled roasted veggies with some of the broth then added it to the pot with the rest of the broth. I dont keep fresh basil on hand, so I used dried. I tasted the soup prepared just as the recipe says, and it had great flavor. Then I peeled and blended one orange, added that to the pot and man did the flavor pop!! As I often do with soups, this made an awesome soup base. Over the next few days, as I reheat a serving, Ill add different spices so I get a little different flavor profile. Tonight was Trader Joes Everyday Seasoning, and the French fry seasoning came from Big Lots. Topped with a dollop of sour cream and enjoyed!!
