Roasted sweet potatoes with cinnamon, veggies and chicken Ingredients (2 servings): - 300 g sweet potatoes - 250 g chicken (filet/breast) - 200 g red onion - 3 cloves of garlic - cinnamon - chicken spices - 200 g broccoli - 150 g carrots Directions: - Pre heat the oven at 180°C - wash the sweet potatoes and cut them in even pieces (I didn’t peel them) - peel the red onion and cut into big pieces - peel the gloves of garlic and cut them into little pieces - put baking paper on a baking sheet. Put the sweet potatoes, red onion and garlic on the baking paper. Sprinkle all of this with cinnamon. - Bake in the oven for 20 minutes. - Turn around - Bake the other side for another 20 minutes - I cleaned and cut the broccoli and carrots and put them in the steamer. You can also roast the veggies or cook them. - Heat up a pan. - cover the chicken with chicken spices - Add non-stick spray, olive oil or coconut oil and fry or grill the chicken - Serve and enjoy Nutritional facts (1 serving): Energy: 308 cal Protein: 35 g Carbohydrates: 37,5 g (sugar 14 g) Fat: 2 g (saturated 0.5 g) Fiber: 9 g
