Roasted vegetable and quinoa salad PointsPlus® Value: 4 Servings: 6 Preparation Time: 0 min Cooking Time: 30 min Level of Difficulty: Easy Roasted vegetable and quinoa salad Ingredients 1 serving(s) Bertuccis Starters Roasted Tuscan Vegetables (Gluten Free) ½ cup(s) Quinoa, uncooked 2 oz Feta, crumbled 8 slice(s) Pepperoni 1¼ cup(s) Red wine vinegar Instructions 1. Cook quinoa in 1 cup water until tender and water is mostly absorbed. Cool to room temperature. 2. Put cooked quinoa in bowl with vegetables, feta, and chopped pepperoni. Add red wine vinegar. Toss with salt and pepper to taste. 3. Chill and enjoy! Notes I came up with this recipe when I had some leftover vegetables from bertuccis and wanted to make a tasty barbeque side dish with leftovers for lunches. The feta and pepperoni add something to make it more than your usual salad.
