Roses are a group of herbaceous shrubs found in temperate regions throughout both hemispheres. The birthplace of the cultivated Rose was probably Northern Persia, on the Caspian, or Faristan on the Gulf of Persia. Thence it spread across Mesopotamia to Palestine and across Asia Minor to Greece. And thus it was that Greek colonists brought it to Southern Italy. Every year during the second half of May, festival of Rose and Rose Water is being held in Kashan, the hub of Mohammadi Rose in Iran. The season for picking rose and preparing rosewater is from early May to mid-June and the scent of rose spreads over different marvelous areas of Kashan, such as Qamsar Joshqan Qali, Barzak and Niasar Rose water is made from a very sweet smelling kind of rose and is used in various traditional dishes and sweets. It is also used as a perfume among Muslims. The people of Ghamsar collect roses, boil them in special pots and collect their water in beautiful containers. It is a pride for the city that each year, the most sacred place on earth, Kaaba (Mecca), is washed with rose water from Ghamsar and this city is like a shining star on the central Iranian desert. The first preparation of rosewater by Avicenna was in the tenth century. It was between 1582 and 1612 that the oil or OTTO OF ROSES was discovered, as recorded in two separate histories of the Grand Moguls. The discovery of rose water was immediately turned to account and the manufacture of Otto of Roses was commenced in Persia about 1612 and long before the end of the seventeenth century the distilleries of Shiraz were working on a large scale. The first mention of Persian Otto or Attar of Roses is by Kampfer (1683), who alludes to the export to India. In the past, rose water was used in traditional Iranian medicine to treat rheumatic heart disease, to strengthen gastric nerves, and to treat some forms of headache and sickness.
