*SLOW COOKED COCONUT ICE FUDGE* Verdict - delicious! 500g white choc buttons 1 tbsp butter 1 Tbsp coconut essence 1 tsp raspberry essence Few drops pink food colouring (I used gel as shown in photo) It took about an hour on high in my 3.5 with no lid. I waited until the end to add essences and colouring. Once the choc and butter was fully melted, combined and thick I divided the mixture roughly into two - about 1/3 into a pot and the rest stayed in the SC. I added the coconut to the larger portion and mixed it in. I put the pot with the smaller portion on the stove on a low setting to prevent it from setting then added the essence and colouring, mixing well to combine - there should be no streaks in the raspberry portion. I poured the coconut portion first into a baking paper-lined tin and leveled it out then carefully drizzled the raspberry portion over top and gently smoothed it out to the edges. It took about 3 hours to set. :)
