SOURDOUGH POTATO STARTER Prepare Potato Water: Cook 1 Pound of PEELED cubed potatoes in 1 1/2 Qt Water until tender. Mash and then force THE water from cooking AND those mashed potatoes through a sieve (strainer); save that as your potato water for this recipe. Mix: 2 C Unsifted flour 1 package Dry Yeast 1 1/2 Qt Warm Potato Water under 100 degrees F 2 t salt 2 T sugar Mix the ingredients in a glass or ceramic bowl only, not metal Cover with a damp cloth and keep in a warm (90 degree) area for 2 days No need to stir Place mixture in a 2 Qt jar with loose lid and refrigerate. Shake the jar before each use as liquid may rise to the top When you are down to 1/4 of the recipe, rebuild by adding all the original ingredients to the 1/4 starter and process as you did the first time.
