SPICY VEGETARIAN SOUP 1/2 cup red quinoa uncooked 1 can white beans, rinsed and drained 1 can whole kernel sweet corn, drained 3/4 green bell pepper chopped 2 tablespoons each sriracha and hoisin sauce 5 cups water, 1 cups for quinoa and 4 for the soup Instructions: 1. Bring 1 cups of water and 1/2 cup red quinoa to boil. Reduce heat to between 2 or 3, simmer for 15 minutes. Remove from heat. 2. in a large pan, bring 4 cups water, 2 tablespoons each sriracha and hoisin, corn, beans and pepper and a little salt to just below simmering on medium high. Simmer for about 10 minutes. Add cooked quinoa to soup and stir. 3. mix ingredients one more time together, and dish up.
