Sailana is a princely state located in Madhya Pradesh, very close to the Rajasthan border. The Sailana Chiefs are Rathod Rajputs, descendents of Maharaja Uday Singh of Jodhpur. One of the ancestors Ratan Singh, rose to distinction under Emperor Shah Jahan after saving the emperor from a charging elephant. The Sailana State lies on the confines of the great Malawa Plateau in Madhya Pradesh. The state owes its origins to the jagir created for Raja Jai Singhji, younger son of Raja Keshri Singhji of Ratlam, in 1716. He subsequently conquered or annexed further territories in the region and established himself as an independent ruler in 1731. The name Sailana derives from the new capital he founded in 1736. Cooking Delights of the Maharajas In the days of the British Raj, Sailana was famous for its Hospitality, Cuisine, Wine and the cactus gardens. The present Maharaja His Highness Vikram Singhji and his family still maintain the old standards of hospitality. On your visit and stay in Sailana, the family retainers serve you delicious meals prepared from authentic Sailana recipes, many of which have been preserved in the famous cookbook “Cooking delights of the Maharajas”; by Digvijay Singhji of Sailana. The culinary culture of Sailana dates back three generations of master culinary experts. Raja Sir Dilip Singh Ji K.C.I.E of Sailana excelled in the culinary arts and collected recipes of bygone eras from the Nizam of Hyderabad, Kashmir and Begum of Bhopal; from which emanated the most exotic culinary recipes. He took great pains to translate ancient recipe books from Sanskrit, Urdu and Persian to ensure that these recipes were preserved for posterity. Today, H.H. Vikram Singh Ji of Sailana along with his daughter Shailja and son-in-law Tikaraj Aishwarya Katoch, are keeping the legacy of the royal kitchens alive by hosting the Annual Sailana Food Festival at their Surajgarh Fort, a heritage hotel in Shekhawati, Rajasthan.
