Sambucus canadensis aka York Elderberry. I have access to a huge bush that is just setting on berries. I read that unripe berries and stems are poison but I know people who pickle the unripe berries and use them like capers. I love capers! I intend to make some of these but I would like to have a better idea of the toxicity. What is a source for information on the chemistry involved? (My hunch is that as capers are usually used sparingly that may modify the issue, or that the acid in the pickling process will likewise modify the issue.) I am WELL aware that this sounds a lot like I am over the top but I can make vinegar from freebee apples, the elderberries are free and I REALLY LIKE CAPERS!!! It fits with my budget and inclinations. Thanks in advance.
