Prepare Ahead You will need a deep-fat fryer or a large saucepan for this recipe Instructions 1 Peel, core, and thinly slice the apples. Place them in a bowl, sprinkle with the lemon juice, liqueur, and 4 tbsp of the caster sugar. Mix and set aside for 30 minutes. 2 Meanwhile, to make the batter, mix the eggs, milk, and olive oil with the remaining sugar. Sift in the flour, baking powder, and cinnamon and stir well to make a thick, smooth batter. Set aside for 30 minutes, to rest. 3 Heat the oil until a piece of day-old bread sizzles and browns in less than 1 minute. Dip the apple in the batter and fry in batches until golden and crisp. Drain on kitchen paper and serve warm, dusted with icing sugar.
