September is winding down and we didnt get as many posts in as we wanted. I worked more than I thought I would at the school lunch program in BESD. Now that October is upon us, I want to concentrate on those fabulous fall veggies like pumpkin, brussel sprouts, parsnips, and all kinds of winter squash. Most of us remember eating some of these as kids and literally chocking them down with our noses plugged because our Moms didnt cook them properly. Well Im here to tell you times have changed and the availability of these power houses of nutrition makes coming up with new and delicious recipes mandatory! I hope to show you that these vegetables can be eaten at any meal - in scrambles for breakfast, soups for lunch and pasta dishes for dinner and even at snack time. So hopefully you will follow along and learn some new an interesting ways of preparation for these old time veggies! Bon Appetit!!
