Shadow and I are off to our friends, Marcia and Mike, for a lovely dinner... our contribution is homemade ice cream pie... I had some vanilla and chocolate ice cream in the freezer and 1/2 pint fresh strawberries, some shortbread cookies, chopped walnuts and shredded coconut and fudge sauce... threw the cookies and nuts in the food processor and pressed the mixture into a glass pie pan and popped it in the oven for about 10 mins and let it cool... in the meantime I sliced up the strawberries and blended them into the vanilla ice cream and after the pie shell was cooled I lined it with the strawberries & ice cream... then I put some walnuts in the chocolate ice cream and layered that over the first layer of ice cream and drizzled fudge sauce on top and more chopped nuts and some coconut. Damn proud of myself: I have used up a little of this and a little of that (and freed up some freezer space!) and some more of this and a bit of that and nothing was wasted. I havent tasted it yet but for the life of me I dont know how an ice cream pie such as this could be bad... Catch ya later!
